Simple healthy pizza

This is my healthy take on pizza…

Super simple and quick to make!

Serves 4

150g chickpea flour
250ml water
Tin of tomatoes
2 red onions
2 cloves garlic
2 red peppers
Goats cheese or feta

Slice the peppers and roast in the oven in olive oil and a little balsamic vinegar. Gas Mark 5 for 20 mins or so.

Chop the onions and garlic and sauté in olive oil, then add the tin of tomatoes and reduce.

Put chickpea flour in a bowl with a pinch of sea salt and a teaspoon of olive oil, add water and whisk into a batter.

Heat a little olive oil in a non stick frying pan and add batter and fry as you would a pancake.

Once you have cooked both sides, add some of the sauce, some of the red peppers, cheese if using and sprinkle over the rocket 😊
