
Easy sweet potato and pea dosa
This delicious sweet potato and pea dosa is a delicious pancake made with chickpea flour that’s easy to make and packed with nutrients 🙂
(Adapted from an Anna Jones recipe)
2/3 sweet potatoes
200g petit pois peas, defrosted
Large red onion
1 tsp turmeric
Ginger, thumb sized piece, grated
Garlic 2 cloves, finely sliced
2tsp cumin seeds
Chilli, finely chopped
Coriander 1 bunch
1 tsp Mustard seeds
150g Chickpea flour
1 Lime
Add mustard seeds to the flour and whisk in 250g of cold water. Add a grind or two of sea salt and black pepper.
Cut potatoes into small cubes, season and oven roast in olive oil until slightly browned.
Fry the onion, garlic, ginger, cumin, chilli, turmeric with coriander stalks, add peas.
Add half the lime juice.
In a non stick frying pan and a little olive or coconut oil, pour the batter to cover up to the edges and cook for a couple of minutes on both sides.
Add the potatoes into the pea and onion mixture. Pile into the dosas. Squeeze some lime and sprinkle over chopped coriander.
