This easy sweet and sour tempeh recipe provides a good range of nutrients, fibre and protein as well as being full of flavour.

What is tempeh?
Tempeh is made from soybeans that have been fermented and compacted into a firm, dense cake. Think of tempeh as tofu with attitude! It’s a bit more robust and has a denser texture than tofu. If you prefer tofu, then it can easily be used instead of tempeh for this recipe. Both tempeh and tofu are nutritious and a rich source of phytoestrogens but tempeh provides more protein, fibre iron, and potassium per serving, while tofu contains more calcium and is lower in calories.
One distinct difference between tofu and tempeh is that tempeh provides beneficial prebiotics. Fermented foods such as tempeh are easier to digest and provide healthy gut bacteria. It’s a good vegan source of protein (19 grams of protein in 100 grams of tempeh) and offers antioxidant properties and heart health benefits too.
Ingredients
- Block of tempeh
- small tin of pineapple in natural juice
- 2-3 peppers
- bunch of spring onions
- 2 garlic cloves
- 1 red chilli
- small piece of ginger
- handful of peas
- juice of a lime
- tablespoon of soy sauce or tamari
- 1-2 tablespoons of apple cider vinegar
- 1 teaspoon of tomato ketchup
- herbs of choice eg. coriander
- brown rice or brown rice noodles
Cut the tempeh into small cubes and fry in some coconut butter until it has some colour. Remove and set aside.
Now add the peppers, chilli, garlic and ginger to the frying pan for 5 -10 mins before adding the soy sauce, apple cider vinegar, ketchup and peas.
Next add the pineapple cut into cubes and some of the juice. Reduce the sauce down slightly.
Finally add the chopped spring onions and the lime juice before adding the tempeh back into the pan.
Serve with brown rice or noodles and a herb of your choice 🙂
