Date, nut butter and chocolate bark

Date, nut butter and chocolate bark is my favourite go-to treat. There are various viral versions of this recipe to be found on social media – and for good reason! Not only does it take minutes to make but it tastes better than anything you can buy.

The dates are soft and chewy and give a lovely caramel flavour. They provide fibre, antioxidants, potassium and magnesium.

The nuts and nut butter add healthy fats, protein, B vitamins, vitamin E, plus iron, potassium, selenium, magnesium, zinc and copper.

And finally, dark chocolate is a source of magnesium, flavanols and polyphenols, which have been linked to heart benefits. Chocolate is also known to have ‘feel good’ neurochemicals.

Date, nut butter and chocolate bark is packed with protein, fibre and other good stuff so you’re less likely to over-indulge – just a small piece hits the spot.

I don’t measure the ingredients – I just make as much as I need. They keep well for several days.

Ingredients

Soft dates

Almond butter

70% dark chocolate

Flaked almonds or chopped pistachios

Method

On some baking parchment, take the dates and press them down so that they flatten and somewhat join together.

Spread over a thin layer of almond butter right out to the edges.

Then sprinkle over the flaked almonds or some broken up pistachios

Melt the chocolate and pour over the top.

Add a little sprinkling of sea salt.

Place in the fridge until the chocolate sets.

Break off into small pieces and enjoy 🙂
