Banana and Berry Breakfast Bake

This banana and berry breakfast bake is my latest go-to healthy breakfast. I’m always asked for breakfast ideas and this is one that I’m currently recommending because it ticks several boxes:

  • It can be made the night before and will keep for 2-3 of days
  • It’s easy, healthy and delicious
  • 2 portions of fruit
  • protein from the egg and almond butter
  • fibre from the oats, including beta glucans, that can help lower cholesterol and support heart health

Ingredients

a punnet of blueberries or raspberries, or half of each

2 large – or 3 small –  bananas

250g oats

1 egg

1 tablespoon of maple syrup (add a little more if you want it to be slightly sweeter)

1 teaspoon of vanilla extract

1 teaspoon of baking powder

60ml milk

2 tablespoons melted butter or coconut butter

2 tablespoons of almond butter

grind of sea salt

Nuts and seeds can be added to the mixture, for extra protein and omega 3, or used on top of some full fat Greek yogurt as an accompaniment

Method

Whisk the egg and add mashed banana

Add the vanilla extract and maple syrup followed by melted butter, milk and then the remaining ingredients

Dust the berries in a little cornflour to stop them sinking to the bottom of the bake and stir them into the mixture

Add to baking dish and drizzle over the almond butter

Bake for 30-40 mins at Gas Mark 4 or 180 degrees celcius

When cooled you can cut into squares and serve either warm or at room temperature with a dollop of yogurt and chia seeds.
