Spring is my favourite season – the days are getting longer, it’s getting warmer (hopefully!) and I love to see things beginning to grow. In fact, there is research to show Spring is beneficial for our mental health and wellbeing. This is in part due to the fact that we are more likely to get outdoors – a study from the University of Michigan linked spending 30 minutes or more outside in warm sunny Spring weather to higher mood and better memory. Our heart rate slows and we feel more relaxed. We also get exposed to some vitamin D from sunshine and the choice of fruit and vegetables begins to become more plentiful.

There are now thousands of peer-reviewed studies showing multiple concerns, links to cancer, and more. And, it’s especially concerning for children because the bone marrow of a child’s head absorbs 10 times more radiation than that of an adult. A number of countries around the world have set severe limits with regards to the use of WiFi and cell phones around children in schools.

Mobile phones and wireless expose everyone to a type of microwave radiation also known as radiofrequency radiation or RF-EMF. Peer reviewed research has demonstrated a myriad of adverse biological effects from wireless radiation including reproductive dysfunction, single and double-stranded DNA breaks creation of reactive oxygen species, immune dysfunction, stress protein synthesis in the brain, altered brain development, sleep and memory disturbances, and increased brain tumours and more.
If you have a teenager you will know they often have their phones turned on and near their body 24/7. Many are literally sleeping with their phone beneath their pillow, emitting radiation.

The primary hazard of phone radiation is not necessarily brain cancer but rather systemic cellular and mitochondrial damage, which is harmful to health in general and can contribute to any number of health problems and chronic diseases. Those with ME, CFS and Fibromyalgia are often especially sensitive to exposure.

Anna Jones

These dense, gooey and chocolatey brownies are made with ground almonds and coconut sugar, so they are a little lighter and more nutrient-packed than your average brownie.

Makes 12 brownies

3 organic or free range eggs, beaten OR 3 tbsp chia seeds
200g dark chocolate (70%), roughly chopped
150g coconut oil
150g coconut sugar
1 tsp vanilla extract
150g ground almonds
1 ½ tsp baking powder, if you are using chia seeds
125g raspberries
50g pistachio nuts, roughly chopped

Preheat the oven to 180c/fan 160c
 Grease a small brownie tin with coconut oil and line it with baking paper
If you are using chia seeds rather than eggs, put the seeds in a little bowl and add 9 tbsp of cold water. Leave to form a gel-like paste.
Place a large, heatproof bowl (big enough to fit all your ingredients) over a pan of barely simmering water, making sure the bowl doesn’t touch the water. Put 150g of the chocolate into the bowl along with the coconut oil, sugar and vanilla extract. Let them melt, stirring from time to time until the sugar is dissolved.
Once melted, take the bowl off the heat and stir in the beaten eggs or the chia seed mixture, then the ground almonds, baking powder (if using), half the raspberries and pistachios and remaining chocolate, chopped into small pieces. Fold everything together until well mixed.
Pour the brownie mix into the lined tin and scatter over the rest of the raspberries and pistachios.
Bake for 30 – 35 minutes until just cooked but still a little soft in the middle.
Leave to cool for at least 20 minutes before cutting. These will keep for 3 – 4 days but I challenge you to make them last that long!
